Cotton de Souffle

This happy little cafe is located just between Damyang and Gwangju in a small town called Goseomyeon (고서면). I'd been drooling over their pancakes over Instagram for far too long so we decided to make the drive out Sunday morning.

The space inside is large and colorful with many plants. There was evidence of a dog possibly living there but sadly we didn't get to meet him or her.

We ordered our pancakes and were sad to find out that the mini pancake sandwiches must be ordered ahead of time. However, the owner was nice enough to give us a spare strawberry pancake sandwich they had leftover from sales.

The main event though was equally gorgeous and delicious! These strawberry souffle pancakes were fluffy, creamy. flavorful, and did not disappoint~ They were also quite filling and we were satisfied after finished the plate together.

We loved Cotton de Souffle and will definitely be back for the tiramisu pancakes and will hopefully remember to order some sandwiches ahead of time~
